Baby Back Ribs

The spare ribs are tougher than baby back ribs.  Being larger and tougher means that spare ribs will generally need to be cooked longer than baby back ribs to become tender. The price for spare ribs is usually much lower because they are mostly bone and fat. Spare can be braised, simmered or slow cooked for overnight to get a tender texture.
